Super easy and FAST! I just threw this together using what I had at home. This is a nice low cal low fat high fiber chili, with heat. It's good served with Low Fat Shredded Cheese & Sour Cream & some corn bread (not included in nutritional information).

1 15oz can sweet corn (rinsed)
1 15oz can kidney beans (rinsed)
1 15oz can black beans (rinsed)
1 28oz can peeled diced tomatoes in juice
1 15oz can peeled diced tomatoes in juice
(can look for no salt added version)
8oz (1 cup) V8 Hot & Spicy Vegtable Juice
1 12oz can tomato paste
1 cup of water
1 cup chopped onion
1 cup chopped bell pepper or 1 med pepper
1tbls garlic powder
1 tsp ground cumin
*Can add chili powder to taste for extra hot*

Put all ingredients in crock pot or large cooking pot on stove. Mix together and heat for 1-2 hours. Crumbles are already cooked so no need cook anything just warm up.
