1 garlic clove minced
3 cups sliced mushrooms
1 1/4 cup chicken broth
1 1/4 lbs bay scallops
3 cups shredded spinach leaves
1/4c water
2 tblspn corn starch
1 tblspn reduced sodium soy sauce
1 egg
6 scallions thinly sliced
1.5c brown rice


How Do I Make Chinese Scallops?

Here is how you make Chinese Scallops:

In large skillet, heat oil then add garlic and cook til lightly browned. Add mushrooms and stir fry for 2-3 minutes. Gradually stir in chicken broth and bring to boil, stirring frequently. Reduce heat and add scallops and spinach. Cover and let cook 2-3 minutes. In small bowl, combine water, corn starch, and soy sauce, stirring to dissolve corn starch. Add to scallop mixture, stirring to combine. Remove 1/2 cup broth from mixture and stir into beaten egg. Slowly pour egg mixture back into scallop mixture, stirring rapidly to prevent lumping.
