Sift together dry ingredients
2 ? c. whole wheat flour

1 ? tsp baking soda
2 tsp. kosher salt (or 1 tsp. table salt)

Mix wet ingredients
? c. softened butter
2 c. sugar (I use Sugar in the Raw)
3 large eggs
2 tsp. vanilla
5 c. grated zucchini with skin, about 2 lbs

Then add
? c. milk
Dry ingredients.
1 c. chocolate chips

Pre-heat oven: to 350? (I use a small counter top convection oven at 325?).

Start with wet ingredients: cream butter and sugar; add eggs one at a time; add vanilla and zucchini and stir to incorporate, well.

Add dry ingredients and milk: Into wet ingredients, mix ? dry ingredients well, then mix in ? c. milk. Repeat with remaining dry ingredients, then remaining milk. (Note: If you don?t mix in ? of the dry ingredients first, the butter and milk will separate and may not incorporate well when you add the dry ingredients.)

Mix in chocolate chips.
Bake: Pour batter into buttered and floured bundt pan and bake for 55 ? 60 min or until done.

Let cool and turn out onto plate. I serve plain, but have sometimes served with homemade whipped cream or a simple powdered sugar glaze drizzled on top.
