Remove the bacon from pan and reserve for topping. If necessary, discard all but a few tablespoons of bacon fat. Saute the onion, carrots and poblano until soft. Season to taste. Add the squash and cook for about 5 minutes. Add the chicken stock and the corn cobs. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes. Add the corn and simmer for another 10 minutes. Stir in the half and half and heat thru.
