What Are The Ingredients For Albanian Cornbread Recipe?The ingredients for Albanian Cornbread are: 2 1/2 c white cornmeal (NOT self-rising)1/2 c flour 1 tsp salt 1 tbsp oil (canola, corn, etc) boiling water How Do I Make Albanian Cornbread?Here is how you make Albanian Cornbread: Preheat oven to 425 degrees F.Bring water in a tea kettle to a rolling boil. Combine corn meal, flour, and salt in a mixing bowl. Do not use a metal bowl, it will get extremely hot once boiling water is added. Using a wooden spoon, slowly pour boiling water over meal mixture. Add about one cup at a time. Mix the meal and gradually add boiling water until the meal consistency is very sticky and soft. You want to make sure you don't leave the mixture too dry, otherwise your bread will come out too dry and hard. Allow the mixture to cool to a warm temperature but also not let it become too cool. Using a pizza pan (without holes), spray with nonstick cooking spray, and sprinkle some corn meal on it. Place the meal mixture onto the pan. In your hands, add the oil and rub between palms. Shape the cornmeal into a large ball and gently pat down to about 1 to 1 1/2" thickness, and into a large circle. Place into the oven and bake until edges become golden brown. Once edges are a nice golden brown, switch to light broil setting, and broil the top of the bread to a light golden brown. Allow to cool, and cut into 3" x 3" or 4" x 4" pieces. 2 small triangular corner pieces can be considered as one serving.
