3/4 cup 2% milk, divided
2 tbsp lemon juice
1 egg

How Do I Make Skillet Cornbread?

Here is how you make Skillet Cornbread:

Mix corn meal, flour and baking soda together in a medium sized mixing bowl. In a small mixing bowl, mix lemon juice and 1 cup milk together and let stand 2 minutes or until thickened to the consistency of buttermilk. To this add the egg and 1/2 cup milk and mix well. Add this to the dry ingredients along with the oil and honey and mix until well incorporated. Add the frozen corn and mix. Take a 10 inch cast iron skillet and heat on the stove over medium high heat. Once hot, add the butter to the skillet and heat until melted and the milk solids in the butter are starting to brown. Add the batter to the hot pan and let this cook for 2 minutes. Transfer skillet to the oven and bake for 20-25 minutes or until golden brown with crisp edges.
