Place small amount of oil in baking pan and place in oven to heat oil.In separate bowls mix dry ingredients and wet ingredients then combine. Add Jalapenos if desired. Bake 20-30 minutes or until brown. I use stone-ground yellow cornmeal. When I first tried this recipe I misread the directions and thought it said to heat the oil in the pan before pouring the batter. It doesn’t actually say that but we like the crispy bottom and edges it gets from the hot oil. I just put the pan in for about 5 or 6 minutes while the oven is heating. We like ours thin so I use an 8x12 pan. If I double the recipe I use my 9x13 and make pancakes.
