How Do I Make Herbed Cornish Hens?

Here is how you make Herbed Cornish Hens:

In a small bowl, combine the sage, allspice, pepper and Rosemary. Coat the hen first with the oil, then the herb mixture, rubbing well. Cover the hen with plastic food wrap & refrigerate for a t least 1 hour or up to 3 hours. Preheat the broiler, setting the rack 8 inches from the heat. Arrange the hens on a broiler pan and broil for 8 minutes, then turn over and broil 7 to 8 minutes longer or until the juices run clear when a thigh is pricked with a fork and a leg moves easily in its socket. If the hens are over browning, tent them with aluminum foil during the last few minutes of broiling. Serves 2.
