Using medium heat. Put olive oil in skillet (choose one with a tight fitting cover). and cook chicken cubes in oil. Add the chopped scallions and stir. Add the carrots and cover to steam the carrots just a little bit. Maybe 3-5 minutes. Stir. Push the mixture to the side and put the bouillon cube in the pan and add the water to the pan. In the open area of the pan crush and stir just the bouillon cube into the water until it's dissolved. Add the season packet from the couscous box to the liquide and lightly stir in. Now cover the pan and wait a few minutes until the liquid is boiling. Uncover, add the couscous and stir in. Cover the pan and remove from heat.
