1 turnip, peeled and grated
1 sweet potato, peeled and grated
1 zucchini, grated
2 carrots, peeled and grated
2 onions, grated

Saute all vegetables in the olive oil for 10 minutes. Add:

1 lb. italian turkey sausage, cut into pieces

and cook for 5 minutes. Add:

2.5 cups chicken or vegetable stock
2 Tbsp. tomato paste
1/2 tsp. cumin
1/2 tsp. chili powder
1 tsp. turmeric
1/4 tsp. cinnamon

When boiling, add:

1 c. uncooked couscous

Cook, stirring frequently, till couscous is done, about 5 min. Add:

1/2 cup sundried tomatoes
1/4 cup raisins
1/4 cup pine nuts, pistachios, almonds, or other nuts
