In a medium saucepan, bring the broth to a boil; stir in the couscous. remove from the heat; cover and set aside until all of the liquid is absorbed, about 10 minutes. 2. Meanwhile, in a large nonstick skillet, heat the oil, Add the onion and garlic; cook, stirring as needed, until softened, about 5 minutes. Add the zucchini, yellow squash and bell pepper; cook, stirring as needed, until the vegetables are tender-crisp, about 5 minutes. 3. Transfer the couscous to a large serving bowl; fluff with a fork.
