1 sweet onion, diced
1 lb. zucchini, shredded
1 ts fresh thyme
1 lb. bag frozen corn
1/2 cup uncooked rice
6 cup chicken broth
1 cup milk
2 T flour
salt
pepper
creole spice


How Do I Make Cream of Zucchini Corn Chowder?

Here is how you make Cream of Zucchini Corn Chowder:

Add shredded zucchini and chicken broth to large soup pot.; Cook until zucchini is done. Put this through the blender until liquified. Chop up bacon and cook until crisp. Remove bacon to drain, saute onion and garlic in bacon pan until soft. Add prepared broth, thyme, corn, rice, salt, pepper, and a dash or 2 of creole spice. Cook until rice is tender. Add 1 cup milk to the blender and 1 cup soup. Blend until liquid. Add back to the soup.
