2 Tbs. Butter
2 Tbs. White Flour
3 Leeks
2/3 Cups Skim Milk
Salt & Pepper
2 Tsp. Lemon Juice


How Do I Make Creamed Leeks?

Here is how you make Creamed Leeks:

A half hour before you need to cook slice 3 leeks, both white and green parts, into thin slices, separate the rings and let it soak in a big bowl of cold water to remove dirt from the inner stalks. Drain the leeks and set aside.When ready to cook, melt the butter in a large saucepan over medium heat, stir in the leeks cooking until translucent. 25-45 minutes depending how soft and creamy you want the leeks. I like very soft and creamy so I cook the leeks down for at least 35 minutes. Mix in the flour with a wooden spoon and cook over medium heat for 5 minutes, stirring the whole time. Pour the milk into flour mixture and continue to cook 10-15 over medium heat until the milk mixture thickens and coats the back of your spoon.Season with salt, pepper and lemon juice.Serving Size: 6 Equal portionsNumber of Servings: 6Recipe submitted by SparkPeople user EMZGRAVES84.
