Cod (fish), 2 fillet
Nonfat Buttermilk (to soak fish)
Cooking spray
Extra Virgin Olive Oil, 1 tsp
Garlic, 1 clove - finely chopped
Shallots, 1 or 2 thinly sliced and broken apart
Capers, 2 tbsp, drained (or more to taste)
Mushrooms, fresh, 1 cup, pieces or slices
Lemon Juice, 1 tablespoon fresh lemon, plus sliced in wheels (just a few 3-4 slices will do)
Sherry, dry, 1 fl. oz
Grey Poupon Dijon Mustard, 3 tsp
Light Cream (coffee cream or table cream), 1 container, individual (small container)

*You will need a 10-12 inch skillet with a metal handle - the whole pan will be put in the oven.

Here is how you make ABDubs Creamy Dijon Fish:

To start, rinse fish and pat dry. Then place fish in a tupperware container with enough nonfat buttermilk to coat it entirely. Cover and place in the fridge. Pre-heat oven to 350.Then chop garlic, slice shallots and mushrooms, and heat your skillet coating with cooking spray, 1 tsp extra virgin olive oil. Saute garlic, shallots, mushrooms and capers until just tender. Add sherry and lemon juice, simmer for a minute or two. Then add the cream and dijon mustard (both quantities can be tweaked to be more or less "dijon-y"). Stir mixture to blend evenly and simmer on low heat.Take the fish out of the fridge and rinse again - pat dry. Place the fish in the pan and be sure that it's covered by the sauce mixture entirely. Add the few lemon wheels. Place the whole pan in the oven and bake for 20 minutes. Test the fish after 20 min. with a fork in the thickest part to be sure it's white and flaky, and cooked throughout.
