Place roast in crock pot. Combine onions, celery, soup, vinegar, beef stew mix, and brown sugar. Pour over roast. Cover and cook on LOW for 10 to 12 hours. Transfer roast to cutting board; cover with foil to keep warm. Let stand 15 minutes. Meanwhile, turn slow cooker to high and stir in crushed gingersnaps; heat until gravy thickens. (Yes, I know it sounds strange, but is REALLY REALLY good). Slice roast and transfer to serving platter. Pour some of gravy over roast. Serve with additional gravy. I usually serve this with mashed potatoes and sauteed red cabbage.
