Add 1 large onion, chopped and 2 cloves garlic, minced or pressed, and cook until onion is soft. Stir in 1 T. curry powder and 3 T. flour and cook until bubbly. Remove pan from heat. Gradually stir in 1 can regular-strength beef or chicken broth. Return to heat and cook, stirring, until thickened. Add 1 red-skinned apple and 2-3 cups meat, chicken or turkey. Cover, reduce heat, and simmer for 15 to 20 minutes or until apple is fork-tender. Serve over hot cooked rice and offer 3 or 4 condiments such as unflavored yogurt, chutney, peanuts toasted shredded coconut and crisply fried and crumbled bacon. Makes 4 servings.
