My boyfriend loves curry and I was not very happy with the fat content in the prepackaged mixes and dinner kits. Therefore, I developed this virgin of one of his favorite brands.This is still a good hardy meal when you are tired and easily adapted to your Crockpot for super busy days.Please note that this recipe works well as a vegan recipe with a few small exchanges listed in the tips section.Also wonderful served on a bed of couscous if you prefer.

Coconut Oil or olive oil, 2 tbsp
Mushrooms, fresh, 3 cup, quartered crimini or shitake
Onions, raw, 2 slice large (1/4" thick) preferably with the grain.
Low sodium chicken bouillon
Garlic, 16 cloves
Boneless, skinless chicken breast, 16 oz
Zucchini, 2.5 cup, sliced
Curry powder, 2 tbsp
Coconut Oil, 2 tbsp
Coconut milk powder mix, 2 tbsp Coconut Oil, 2 tbsp
Water 2.5 cup (8 fl oz)
Cornstarch 2 tbsp combined with 2 tbsp water

Jasmine Rice 1/2 cup cooked, eight servings



How Do I Make Coconut Tia Curry?

Here is how you make Coconut Tia Curry:

Heat oil in wok or large non-stick skillet, once oil comes to saut? temperature, add mushrooms and let saut? for 2-3 minutes. Once the mushrooms start to soften, add the onions and the chicken bouillon. (Please note that we are using the bouillon in place of salt during the saut? and this will add wonderful flavor to the vegetables as well.) Once the onions start to soften add the chick, stir occasionally until chicken has cooked through, and light golden brown. At this stage add the zucchini and allow this to saut? for a few moments, (we do not want to cook it to mush and it will simmer for a bit later) allowing it to pick up some color from the pan.Once the zucchini starts to soften, add the curry powder and the coconut powder and stir until it coats the contents of the pan. Add the water you only need enough to cover you meat and veggies, this maybe more or less then what I needed. Let simmer for 20-30 minutes or until all veggies are tender, while the curry simmers prepare your jasmine rice according to the package directions, bring to boil and gently stir in the cornstarch mixture, and boil for one minute.
