Here is how you make Jack's Lamb Curry:

heat oil in a saucepan, add ginger, garlic, chilli and onion, cook stirring for a few minutes. Add the spices cook another minute or so until nice and fragrant.Add the meat and stir until browned all over, cook for 5 minutes, then add carrot, plums and tomatoes.
