This is a variation of a recipe my mom had for Joe's Special (originally made with hamburger). It's full of protien and vitamins and yummy to boot! If you have room in your meal plan... it is extra good topped with parmesan cheese, but it's good without it :)It makes 20 cups. I put it in meal size containers and freeze it for a quick meal. The recipe is easily cut in half :)

2 large onions
6 cloves of garlic (you can reduce if you don't care for heavy garlic)
1 tsp. Seasoned Salt
3 tablespoons extra virgin olive oil
16 oz package frozen chopped spinach
18 eggs


How Do I Make Joe's Special with Elk and/or Deer?

Here is how you make Joe's Special with Elk and/or Deer:

**Thaw out spinach when you defrost the meat**Chop Onions. Put oil in large pot over medium heat. Add onions and salt and saute. While onions are cooking chop mushrooms into quarters. Add mushrooms as you chop them. Mince garlic and add to pot. Continue cooking on medium until mushrooms cook down. Break up meat and add to pot in small pieces. Stir in to pot and cook until meat is done. Squeeze all the water out of the spinach. Break spinach into small bits and add to the pot a little at a time, and stirring it in well (spinach tends to clump). Break eggs and beat until mixed well.
