Roughly chop the tomato and garlic and put into a blender/food processor with the vinegar, soy sauce and 1 tablespoon of olive oil. Blend until a pulpy mixture forms. Add a little water if required.3. Beat the egg in a large bowl and mix in the mustard.4. Add the blended ingredients and mix together until well incorporated.5. Add salt and pepper to taste, keeping in mind that fish is already salty. Add the fillet of cod fish and mix using your hands or gently with a wooden spoon until the fish is fully covered with the marinade.6. Leave to marinate for 1 hour or, at the very least, 45 minutes so that the flavor merges with the fish. In the meantime, prep your baking tray.7. To prep the baking tray, brush it with the remaining 1 tablespoon of olive oil and preheat your oven to 350 degrees.8. Once the marination period is over, use a pair of tongs to lift each fillet and place it on the baking tray. Using a spoon, cover the each fillet with the leftover marinade. This will form a nice, flavor-filled crust when it's baked.9. Wait 15 minutes for the fish to bake and then lower the heat to 250 degrees. As you do this, flip over each fillet on the baking tray and then leave to bake for the remaining 15 minutes.10.
