Baking powder, 1.5 tsp.
Basil, fresh if possible - 2 or 3 leaves, chopped rather finely
--or use about 1 tsp freeze-dried basil
Tarragon, dried, approximately 1/2 tsp
Onion, minced, 6 tablespoons
Fresh lemon juice, approximately 3 tsp
Shortening, Crisco, about one-half cup, more or less

Makes 8 servings.Open and drain can of pink salmon; carefully remove spine bones and skin as cleanly as possible. Some would add about 2 tablespoons of the can liquid, but I prefer to add water instead if necessary for texture. Break up the salmon in a medium-sized bowl. Combine with the flour, baking powder, and remaining seasonings. Form into 8 patties. Take a large frypan. When shortening has been added and melted at medium temperature, add the flattened patties after starting with equal-sized balls. Ten to 15 minutes is all the time one needs to have nicely browned patties. Add whatever condiments or sauces you care to come up with.
