20-24 Medium shrimp ( I use the cooked, peeled, frozen ones)
1 cup uncooked whole wheat couscous
1 shallot finely diced
1 tsp. olive oil
2 cloves garlic pressed
1/2 can of anchovies
fresh ground pepper to taste
red pepper flakes
1/4 tsp. dried basil (fresh would be better, but use more)
1/4 tsp. dried thyme (again if using fresh use more)
1 can diced tomatoes in juice
1 cup water


How Do I Make Easy Shrimp Couscous?

Here is how you make Easy Shrimp Couscous:

In a 12 inch non-stick skillet on medium sautee the shallots and 1/8 tsp red pepper flakes in the olive oil until they become translucent. Add the pressed garlic, the herbs, the pepper, and the anchovies, sautee for about 1 minute. Add the can of tomatoes and the cup of water. Allow to come to a boil. Add the shrimp and return to a simmer. Stir in the couscous and simmer for 2 minutes. Cover and let stand for 5 minutes.
