Here is how you make Easy and Healthy Stuffed Peppers:

Preparation:Cut onion into large chunks and throw into a food chopper or processor. chopping into tiny pieces; if done by hand, dice onion as small as possible. Set aside.Cut carrot into large chunks and repeat process as with onion. Also set aside.Wash peppers and cut each one in half, removing tops, seeds, and white parts so that each is left as a clean half-shell. Arrange peppers into a large baking dish and set aside.Preheat oven to 400 degrees F.Cooking:Warm a wok (or large frying pan) on medium heat and add olive oil.Cook onion for 1-2 minutes until soft, then add carrot to the pan and cook for another 2-3 minutes.Add ground turkey to the mixture and salt/pepper almost immediately, mixing everything together. After 1 minute or so, add garlic powder and italian seasoning.After about 5 minutes, when meat is almost cooked, add tomato sauce and stir well. Then add ? cup of chicken broth.Add more salt and pepper if desired, then add spinach to the pan. Stir mixture well and cook another 1-2 minutes, until spinach is half-wilted. Simmer until moisture is mostly evaporated, then remove from heat.Bring out your half-shell peppers and begin adding turkey mixture to each shell until all shells are filled and mixture is completely used. Pour the rest of your chicken broth into the bottom of the pan with the peppers and cover entirely with aluminum foil. Place peppers in oven and set a timer for 30 minutes.You're done! When the timer beeps, enjoy 1 or 2 peppers (or even 3!) for a low-cal dinner you can feel good about. Serving Size:?Makes 6 stuffed peppers (each serving is ? pepper)
