1 cup low fat Tomato Sauce or Marinara
1/2 cup water
1 medium Red or Green Bell Pepper, diced
2 small or 1 large Roma Tomato, diced
1 medium Onion, diced
1 clove Garlic, minced
2 tbsp. Chili Pepper, (more or less to taste)
2 tbsp. Maple Syrup or Brown Sugar
1 tbsp. Red Wine Vinegar
1 tbsp. Extra Virgin Olive oil
6 Whole Wheat Hamburger Buns or Pita Pockets


How Do I Make Easy Vegetarian Sloppy Joes?

Here is how you make Easy Vegetarian Sloppy Joes:

In a wide shallow pot, sautee onion and garlic in olive oil for 5 minutes on high medium high heat. Add tofu and crumble with wooden spoon. Mix in chili powder. Sautee 5 minutes more. Add bell pepper and black beans. Sautee 2 minutes more. Add tomato sauce, chopped tomato and water. Simmer covered on low heat for 5 minutes. Add vinegar and maple syrup or brown sugar. Cover and simmer 5 minutes more. Remove cover and simmer if too thick or add more water to thin depending on preference.
