place eggplant slices on greased baking sheet in the oven till they brown ( app. 30-40 minutes) spray or brush eggplant pieces w/olive oil.
in a separate pot place chopped onions and chopped garlic cloves and sautee in a little olive oil.
chopped tomatoes place in pot . Mix 1 cup water with 1 .5TBSP tomato paste and 1 TBSP red aleppo pepper spice ,1 TBSP salt and blend.Pour this mixture into pot. Remove eggplants from oven when done and add to pot. cook on high bring to boil then put on low and cook for 30 minutes. Let it cool then refrigerate.
Serve cold from refrigerator with whole wheat Pita bread.
makes 6 servings. Great cool dinner for summer nights.
