Remove eggplant, leaving remaining bread crumbs in bag. Dip the eggplant in the milk and then back in bag again to coat again. Place on cookie sheet sprayed with cooking spray and place in oven on broil until golden turning once.Dip in favorite tomato or spaghetti sauce.
