The ingredients for Eggplant and Feta Roll-Ups are:

1 whole eggplant, unpeeled
4 oz Feta cheese (use fat free to save calories)
1 cup sliced mushrooms
1/2 cup sliced onions
11/2 cups your favorite marinara (the chunkier the better!!!)
1 tbsp of olive oil
spray oil
spices, as desired ( I add oregano, salt & dill)


How Do I Make Eggplant and Feta Roll-Ups?

Here is how you make Eggplant and Feta Roll-Ups:

Slice the eggplant lengthwise in 8 pieces and discard the 2 end peices, leaving 6 remaining large, flat slices. Using the oil spray, spray a baking sheet and place eggplant pieces in a single layer and spray again. Then cover with foil and roast until tender.While roasting the eggplant slices, saute the onions in the olive oil over medium heat until tender. Add the mushrooms and spices and cook until tender. Turn the heat to low and add half the marinara sauce. Cut the feta cheese in 6 rectangular blocks roughly the width of the eggplant (1 inch).Allow the eggplant slices to cool to the touch. Place a rectangle of cheese at the wider end of the eggplant. Place about 1/6 of the onion & mushroom mixture next to it. Roll the eggplant up. Place all completed eggplant rolls in a baking pan, cover with the remaining marinara then foil and bake for about 10 minutes.Makes 2, 3 roll servings if using as a main course.
