Here is how you make Eggplant Roll Ups:

Combine motzarella, parmesan, ricotta 1 egg, 1T parsley, salt & pepper in a mixing bowl. Blend to a smooth paste. Cover & chill.In another bowl, mix flour, 1 egg, milk & oil; beat until smooth. Slice eggplants, lengthwise, into thin slices. Dip in additional flour and shake off the excess.Heat olive oil and butter together. Coat eggplant slices in prepared batter and saute' in hot oil until browned on both sides; drain on paper towels.Preheat oven to 375 dgrees. Place 2 T. chilled cheese mixture on each slice. Roll loosly; arrange rolls, seam side down, on a baking pan. Cover with pasta sauce and sprinkle extra parmesan cheese on top. Bake 15-20 minutes.
