Spray 2 rectangular baking dishes with cooking oil. Coat the bottom with a little of the enchilada sauce. Dip a tortilla in the sauce and flip over. Fill tortilla with about 3-4 tbs of chicken mixture. Roll up tortilla seam side down. Repeat for the rest. Pour remaining enchilada sauce over both dishes. Sprinkle cheese over and garnish with olives.
