2 28 oz cans green enchilada sauce
1 15 oz can black beans
1 med onion (I like a red onion)
1 16 oz bag of reduced fat Mexican cheese
1 can black olives sliced for garnish

Here is how you make White, Black and Brown Enchilada:

Preheat oven to 375.Mix together :1/2 of the cheese, 1/2 C enchilada sauce, beans, rice, chicken, and onions in a bowl. Spray 2 rectangular baking dishes with cooking oil. Coat the bottom with a little of the enchilada sauce. Dip a tortilla in the sauce and flip over. Fill tortilla with about 3-4 tbs of chicken mixture. Roll up tortilla seam side down. Repeat for the rest. Pour remaining enchilada sauce over both dishes. Sprinkle cheese over and garnish with olives.
