** Preheat oven 350.1. Brown and drain ground beef2. Spray small baking dish (8x10) with cooking spray.3. Place equal portions of beef and sauce in 8 cauliflower tortillas. 4. Roll them up and place them side-by-side in baking dish.5. Pour remaining sauce over top of enchiladas.6. Sprinkle onions, olives, and cheese over the top.7.
