Chicken Breast (skinless, boneless)Dove Chocolate Sweet & Spicy Rub or Trader Joe's Spicy Hot Cocoa (2 Tbsp) 1 Large Red Pepper Sliced into Thin Strips Onions, Sliced into thin rings Cherry Tomatoes, about 20 Tortilla Multi-Grain Low-Carb Tortillas (60 calorie ea) 1 Can Pinto Beans Enchilada Sauce (28 oz. Can) Salt, Pepper, chipotle Pepper Powder, Garlic Powder 1/4 cup salsa .75 c. Cheddar Cheese (shredded) Sour Cream (Optional) How Do I Make Guilt Free Enchiladas?Here is how you make Guilt Free Enchiladas: -Preheat oven to 375 degrees.-Spray 9 x 11" baking dish with cooking spray-Spray chicken breasts with cooking spray and season with salt, pepper, ground chipotle, garlic powder and 1.5 teaspoons of spicy cocoa rub.-Place in oven for 25 - 30 minutes until done.-Place cut onions and pepper on aluminum foil lined cookie sheet (sprayed with cooking spray) and season with same seasonings as chicken (including cocoa rub).- Bake peppers and onions along with chicken for 15 minutes.- Place sliced cherry tomatoes on top of the onions and peppers that have been cooking and bake another 10 - 15 minutes.- While chicken and veggies are cooking, heat up pinto beans in a saucepan with a little salsa and mash up with a potato masher until consistency is like refried beans.- Remove chicken & peppers from oven letting chicken rest for 5 minutes.
