12 oz. ground chuck
10 oz bag fresh spinach, chopped
1 can enchilada sauce
1 can chopped green chilies
1 can salsa verde
15 oz can black beans, drained
1 small, chopped onion
1 Tbsp chili powder/seasoning
1 heaping Tbsp minced garlic
1/4 c. shredded Provolone
1/4 c. crumbled Feta


How Do I Make Becky's Zippy Enchiladas?

Here is how you make Becky's Zippy Enchiladas:

Cook onions until translucent, add ground chuck, salt, pepper, garlic & chili powder. When cooked, add salsa verde & green chilies, cook down until some of the liquid is gone & then wilt the chopped spinach on top before stirring it in. Add black beans & stir well. Add mix to end of one wrap, top w/feta & roll up. Repeat to make 6 wraps (will have extra filling). Put in 8 X 11 pan. Pour enchilada sauce over the top, sprinkle w/shredded Provolone.
