Combine remaining ingredients, except onion and bell pepper, in a medium mixing bowl. Add meat and marinate at least 8 hours, preferably overnight. When ready to cook, spray a large cast iron skillet with olive oil. Add onions and cook 5 minutes, till soft and translucent. Add bell pepper and cook till softened, about 3 minutes. Remove veggies to a plate and keep warm. Add meat to skillet, adding more oil if necessary, and cook a few minutes on each side, till desired doneness. Remove to plate and serve. To serve fajitas, roll meat and veggies in warm tortillas* (corn or flour), garnish with fresh pico de gallo*, guacamole*, and sour cream* (if desired). *not included in nutritional information for this recipe, due to great variation in nutritional values depending on what recipe/brand is used.
