Put into a mixing bowl and add the taco seasoning. You can also add some cilantro and chopped onion for added flavor at this time. You can also add about 1/4 cup of enchilada sauce if you desire. Combine the mixture together.Use a 9x12 baking dish and lightly spread the bottom of dish with some of the enchilada sauce.Wrap tortillas in a moist paper towel and warm in the microwave for 30 seconds. This will make them soft and pliable.Spread 2 to 3 Tbs of chicken mixture onto center of tortilla, roll and place into baking dish. Repeat with other 5 tortillas.Pour remaining enchilada sauce over rolled tortillas and top with cheese and olives.Bake in oven for 20 minutes, covered.
