On a cookie sheet, mix veggies (onions, zucchini, squash, bell pepper) with olive oil and roast in oven at 400 degree until desired doneness. I like my onions sweet, so I cooked until caramelization-15 minutes. I also used the shredder in my food process and ran all of the veggies through it rather than chopping them. 2. In a bowl mix -ground beef, bread crumbs, egg, thyme, parsley, garlic, 1/2 of ketchup, worcestershire sauce, barbecue sauce3. Combine with roasted veggies - mix well4. Form loaf on sheet pan lined with parchment paper5. Mix balsamic vinegar, and tomato paste. Spread on top of loaf for glaze. 6. Bake at 425 degrees for 1 hour. Makes 8 servings.
