Dissolve yeast in warm water in a good sized bowl, let stand 5 minutes or until bubbly.Heat 4 Tb oil in a small saucepan over medium heat. Add thyme to pan, cook 1 minute or until bubbly and fragrant. Add this and the milk to the yeast bowl, stirring with a whisk. Then add, still stirring, 1 C cheese, sugar, salt, and egg.Lightly spoon the flour into a dry 4 cup measure. Using a wooden spoon, stir the whole wheat flour into the yeast mixture. Stir well. Add enough of remaining flour little bit at a time to form a smooth but sticky dough. Place dough in a large bowl coated with cooking spray, turning to coat top. Cover and refrigerate overnight. (dough won't rise)Remove from fridge, do not bother punching down, it hasn't risen! ;) Dump out onto a floured surface and divide into 4 pieces. Take each piece and roll out into a circle. Spray with pan spray and sprinkle with parmesan. Cut into 8 triangles (like cutting a pie) and roll each piece from the outside in, placing on a greased cookie sheet. I fit 16 on a sheet.You can put parchment paper on instead of spraying, but I figure spraying works good. place in a warm spot free from drafts and let rise 1 hour or until soft.Preheat oven to 400. Place sheet in pan, immediately reducing heat to 375. Bake for 12 minutes or until golden brown.
