Add grits and cook until water is absorbed, about 30 minutes until smooth. Remove from heat and stir in butter, cheese and pepper until the cheese is melted. Set aside. Fry the "bacon" in a large skillet until it's browned - it won't brown like regular bacon. In the tiny amount of grease that's left, add shrimp. Cook until shrimp turn pink. Add lime juice, chopped "bacon", and garlic, and cook for another 5 minutes or so. To serve, spoon 1/4 of the grits on a deep plate or bowl, and spoon 1/4 of the shrimp mixture over top.
