Halibut or any other firm white fish fillet (1)
1/2 pkg frozen spinach, thawed, drained & liquid squeezed out.
1-2 cloves garlic chopped
1/2 med onion diced
1 small can mushrooms, drained
1 regular size can diced tomatoes, drained
1 cup good white wine (one that you would drink) if you do not wish to use wine you may substitute with chicken broth.
3 Tablespoons olive oil


How Do I Make Awesome fish?

Here is how you make Awesome fish:

Coat the bottom of a med sized skillet with olive oil, 3 Tablespoons over med high heat. Add diced onion, salt and pepper to liking, and cook 3-4 mins, add garlic & mushrooms, cook additional 3-4- mins. Add spinach, cook 2 minutes, add tomatoes, add additional salt and pepper if needed. Cook another 2 mins. Add wine, salt and pepper both sides of the fish then add to the middle of the skillet, reduce heat between med-low and low, cover. Cook approx 10 minutes, turn fish over and cover again, cook 5 mins longer then turn heat off. Leave on stovetop for approx 5- 10 minutes till fish is done, testing with fork, if fish flakes easily it is done. Makes 1 serving.
