Add vinegar to water. In a smaller pot, set 3 cups of water to boil for the grits. Dice onion and slice tilapia into 1 inch chunks. Once water starts to boil in large pot, add onions and fish. Chop parsley and dice scallions. Add grits to smaller pot and stir for five minutes. Drain fish and onions once fish is cooked through. Spoon grits onto a plate, top with fish and onions. Garnish with parsley and scallions, salt and pepper, butter, cheese, hot sauce or lemon or lime. Makes four delicious servings.
