1-1/2 T grated orange rind
1 T grated lime rind
2 T tequila
2 t sugar
2 t warm water
1 pound flounder, basa or halibut
1/4 t salt
1/4 t pepper
1 t olive oil
1.4 c reduced-fat mayo
1 T finely chopped cilantro, fresh
1 T fresh lime juice
1-1/2 T finely chopped chipotle chile, canned in adobo sauce
8 corn tortillas (6")
1 c trimmed arugula
1 c. shredded cabbage
1 c refried black beans

Here is how you make Margarita Fish Tacos with Chipotle-Lime Mayo and Arugula:

Serves 4 (2 tacos per serving)Combine rinds, tequila, sugar and warm water in a ziplock. Add fish to bag. Seal and marinate in fridge for 30 min. turning occassionally. Remove fish from bag and discard marinade. Pat fish dry and sprinkle with salt and pepper.Heat oil in nonstick skillet over med-hi heat. Add fish and cook for 4 minutes on each side or until fish flakes easily when tested with a fork. Break fish into chunks.Combine mayo, cilantro, juice and chipotle. (If you can make in advance, this allows the flavors to intensify, but it is not necessary). Warm tortillas according to package directions. Divide fish evenly among tortillas. Top each tortilla with 1/8 c arugula, 1/8 c cabbage, a little less than 1/8 c. black beans and about 2 t mayo mixture. Fold in half and serve.
