In a small frying pan heat 1 Tlbs Olive Oil and caramilise the - Red pepper , Mushrooms,Fennel and Garlic.In a glass dish slice rest of Ingredients and microwave for 6-8 minutes or until well cooked. Mix the Ingredients together and let them cool down. Add the egg whites and Romano Cheese and mix well. Heat up a frying pan that has been sprayed with olive oil and put the mixture and slowly cook until brown, flip over and cook for another 3 minutes on low heat.
