Here is how you make Kumera Frittata:

1. Slice cherry tomatoes in half, brush with a little of the olive oil and grill until browning on top. Remove from oven and set aside.2. Slice Kumera into 0.5 cm slices and boil until just cooked. Drain and set aside3. Heat remaining oil into a heavy frying pan and slowly saut? red onion and celery for about 10 mins.4. Add herbs and cook for another 2-3 mins. Remove onion, celery and herb mix and set aside.5. Grate the cheddar, chop the feta into small cubes and drain the olives.6. Whisk eggs with water, salt and pepper to taste.7. Take half the cooked kumera and cover the bottom of the frying pan, add half the tomatoes, onion celery mixture, feta and cheddar. Pour over half the egg mix.8. Repeat the above step.9. Return the fry pan to the stove top at low heat and cook through.10. To finish off, pop under the grill for a couple of mins11.
