1 9" parsnip, grated

1 8 oz tub ricotta cheese
12 lg eggs
1/2 c. colby cheese, shredded
2 t. salt, divided
2 t. Italian seasoning, divided
1 t. garlic powder, divided
2 T. cornstarch
2 oz. bacon bits


How Do I Make Nearly Paleo Frittata?

Here is how you make Nearly Paleo Frittata:

Preheat oven to 350F. Grease 9x13 pan. Melt butter in large skillet. Saute onions, mushrooms, parsnips and carrot until nearly tender, about 15 mins. Season with half seasonings. Dump veggies into large mixing bowl. Brown sausage in same pan. Add to bowl. Add spinach to sausage & veggies, toss. Put in bottom of casserole dish. In another bowl, beat eggs, cheeses and remaining seasonings. Add cornstarch. Pour over top of veggies, smoothing with fork. Top with bacon bits.
