What Are The Ingredients For Barely There Frittata Recipe?The ingredients for Barely There Frittata are: 1 tbsp Olive Oil1 cup carrots, diced ( I like mine about 1/4 in.) 2 medium Summer squash (about two cups) 2 cloves Garlic, diced fine 2 small jalepenos (these are from our pepper plant out back, so they're pretty small compared to some I have seen in the store. ) 1 small serrano pepper 2 medium tomatoes (I used heirlooms from my sister's garden, not terribly juicy..which is good) 1 cup Corn, frozen (canned would do just fine) 1 cup chopped cooked turkey breast (I used Louis Rich) 8 egg whites (and two more for a sturdier frittata) 2 egg yolks Dash of onion powder 1/2 tsp Chipolte Salt Pepper (preferably fresh cracked) Creole Seasoning mix (love this stuff! I like the Spice Hunter salt free variety) How Do I Make Barely There Frittata?Here is how you make Barely There Frittata: Makes 6 wedges.Heat oil in a skillet over medium heat.While it heats beat your eggs with a fork, the chipolte and a dash of onion powder. I also add a dash of salt and pepper.Once warm, add carrots, garlic, peppers and squash. Dash of salt to heat sweat the veggies and I always dust it with some cracked pepper.Cook till the carrots are just starting to get tender, then add the tomatoes and frozen corn. Sprinkle liberally with creole seasoning.Cook all this down, stirring regularly, until you are getting the right texture. I like mine to still have a bit of bite to them, so for me it's when the carrots are just shy of perfect.Add the turkey, toss to mix and heat through. Add a little more creole seasoning if needed.Add egg mixture. I make sure to stir once or twice right after it's in to coat the ingredients and then spread out in as even a layer as possible.Turn on your broiler. Once the edges have set and there is only a slight jiggle in the middle when you wiggle it, toss it under the broiler. Not the top shelf but the middle one. May take a little longer but I have better control of the browning on top. Remove once there is no jiggle and GBD (golden brown and delicious).Remove from oven. I let mine set for a minute or tow before cutting to let it cool slightly.
