Liver is full of vitamin A and iron as well as being lean and contains other goodies, and I love the taste in this classic recipe which I inherited from my mother. Great to have one a week to really give yourself a huge energy boost.

1 Lambs liver (look for the lighter coloured liver and get fresh from your local butcher if possible)
1 large onion
2 slices lean bacon
1 tbsp olive oil
1 tbsp gravy powder
cornflour to thicken
hot water as needed (see recipe details)
1tsp worcestershire sauce


How Do I Make Lambs Fry?

Here is how you make Lambs Fry:

Dice the onion and bacon and put in frying pan with olive oil. Meanwhile thinly slice the liver into strips and set aside.Cook the onion and bacon in oil until onion is slightly transparent and then add the liver and stir into the bacon mixture. Cook until liver is just cooked then add hot water (about a cup for a start) to loosen the mix and make a sauce. Cook for another few minutes then add gravy powder and cornflour (mixed in a little cold water to make a paste) and add to pan until gravy thickens to your liking.Add worcestershire sauce and mix.You can add more water and gravy mix to suit your tastes.Serve Lambs fry with mashed potato, rice or vegies.Lambs fry is quite rich in flavour so the side dish is usually bland, like rice to soak up all the flavour, otherwise it is an overkill of taste.
