I used one large, peeled eggplant. Directions:Sautee garlic in olive oil (you could probably skip this step all together and save the calories if you want), add all other ingredients to pressure cooker. Add water if needed, according to pressure cooker instructions. Stir. Close and bring up to pressure. Cook 6 to 8 minutes.Quick vent according to your model's instructions.
