* Onions red and white pearl onions peeled
* Mushrooms, fresh, 1 cup, pieces or slices
* Sherry Cooking Wine 1 cup
* Thyme, fresh, 1 tsp
* Rosemary, 1 tbsp
* Chicken Broth 1 cup (8 fl oz)
* Garlic, 8 cloves
* 1 cup water
* 2 tablespoons cornstarch

Here is how you make Rosemary and Garlic roast:

Pour all of the liquids into a slow cooker, add the mushrooms, carrots and pearl onions. Then add fresh thyme and rosemary. Cut the roast into smaller chunks and trim it of all visible fat for the 5 hour cooking time, cut holes into the roast and insert slices from 6 cloves of garlic into the holes in all the pieces. Add another couple cloves to the slow cooker, toss it all in and let it cook on low for 8 to 10 hours and on low for 5 to 6 hours. At the end of the cooking time, mix the cornstarch with some water, whisk and add it to the slow cooker, let cook another 10 minutes or so. ** I used top sirloin roast because it's leaner and more tender, but you can use any roast. You can add potatoes to it if you wish but the nutrition was calculated without them. I serve it over my mashed root vegetable recipe.
