Heat oil and garlic in pan over medium heat. While heating, sprinkle salmon, shrimp and scallops with jerk seasoning lightly. 2. When hot, add scallops and salmon, turn heat to med-high and sear 3 minutes until golden brown. 3. Turn Scallops over and sear for 1 minute. Be careful not to overcook. 4. Remove scallops and salmon from heat. 5. Add remaining ingredients: ginger, soy, lime and 1/4 tsp of jerk seasoning to the pan and simmer for 1 min. over med-high heat. Add Shrimp, cook until pink. 6. Return salmon and scallops to pan, toss to coat and reheat briefly.
