1/2 Ten- oz. jar (8 TBSP or 5 oz) Polaner All Fruit Apricot Spread
1 tsp cinnamon

Here is how you make Apricot-Glazed Cornish Hens:

Makes 4 servings: 1/2 cornish hen per serving1. Preheat oven to 4252. Line a 14 x 10 baking pan with heavy duty aluminum foil; set aside.3. Remove giblets from hens. Rinse hens with cold water and pat dry. 4. With scissors or kitchen shears, remove skin from hens (if desired . . . I don't).5. Sprinkle hens with salt inside and out.6. In a small bowl, combine apricot spread and cinnamon. This is your apricot glaze.7. Brush hens all over with apricot glaze; set aside remaining glaze.8. To prevent over-browning and preserve juiciness, use a foil tent. (Crimp foil tent onto long sides of pan to hold in place.) Bake for 20 minutes under the foil tent. (I start with hens upside down.)9. Remove foil tent. Brush with glaze again.Use tongs to flip birds right-side up. Brush tops with glaze at this time.10. Brush tops with glaze 2 more times, baking uncovered until hens are tender and juices run clear, about 40 minutes longer. Will appear slightly blackened (beautifully!) on top, and will be exceptionally juicy inside. Serve with colorful side dishes.
