1/3 pound (about 5 oz) large scallops - about 4
3/4 T soy sauce
2 T apricot preserves, all-natural
4 oz cooked edamame (I like the frozen pouch at Costco that you microwave. One pouch makes 4 oz cooked, shelled edamame)

Serves 2. 1. Soak noodles in hot water for 10 minutes. While they're soaking:2. Heat oil in large skillet on medium-high heat. Add onion, ginger and garlic and cook for 2 minutes. Add scallops and cook for 2 minutes, until opaque. In a small bowl, whisk soy sauce into apricot preserves. Add apricot mixture to skillet and bring to a simmer over same heat.
